Roses with saffron
One of the best sweets are the roses with saffron, the characteristic that converts this sweet as unique is the shape, a sort of rose all next to each other, it requires time to be prepared because the dough needs to levitate, but it’s not so difficult to elaborate.
- 500 gr of flour
- 100 gr of butter
- 220 ml of milk
- 100 ml of water
- 1 egg
- 1 yolk
- 1 bag of yeast
- 0,5 grams of pure saffron
Form a fountain with the flour, add a bit of salt and sugar, meanwhile let the yeast dissolve in 100 ml of warm water for 5 minutes, after that add the compose to the center of the fountain that you prepared before and work with the hands to obtain a sticky dough. Cover it and let rest for 30 minutes

with a hook, squish the dough, add the cup with milk and saffron, the remaining milk, the butter and the egg, after this, transfer the compose in a floured plain and make it compact with the hands, take back the dough in a bowl, cover it and let it levitate for an hour.
How to form the saffron roses
Divide the dough in seven parts almost equal, form some long strips that about 20 centimeters long and roll them forming a rose. Cover with a butter a circular mold and transfer the rose starting from the center to the extern. Let it levitate for another half hour and cook in oven for 220 °C for 25 minutes.
